The breadcrumb dressing in this recipe can be stored for up to three weeks in a
hermetic container kept in the fridge. Sencha tea is a green tea from Japan
that is becoming increasingly popular worldwide. After being picked, the leaves
are passed through vapour and then rolled. Enjoy!
- 4 whole chicken breasts (5 oz. each), skinless and without fat
- 2 Tbsp. olive oil
Dressing
- 2 Tbsp. Japanese green tea (preferably Sencha), non-infused
- 2 Tbsp. fresh mint
- 1/4 cup ground lemongrass
- 3/4 tsp. salt
- tsp. brown sugar
- 2 Tbsp. orange zest
- 2 Tbsp. lemon zest
- 2 Tbsp. fresh ginger, grated
- 1/2 tsp. ground cumin
Mix all dressing ingredients in a bowl.
Thoroughly cover the chicken breasts with mixture.
Heat the oil in a large pan. Cook the chicken for 2 minutes on each side.
Put the chicken in a baking plate and cook in oven at 350 C for about 15 minutes,
depending on thickness.
Makes 4 servings.
