Heart Healthy Recipe - Mediterranean Chicken With Capers
This is a super healthy and nutritious recipe that my wife clipped from a
magazine,
and which has now become a staple at our dinner table. Enjoy!
- 6 skinless, boneless chicken thighs
- 1/2 tsp (2 ml) dried basil
- 1/2 tsp (2 ml) dried oregano leaves
- 1/2 (2 ml) tsp salt
- 1 tsp (5 ml) olive oil
- 2 green onions
- 1 pint cherry or grape tomatoes
- 2 tsp (10 ml) capers
- 2 garlic cloves, minced
- 2 tbsp (30 ml) shredded fresh basil leaves
- (Optional) grated Parmesan
Lay chicken flat, then sprinkle with dried basil and oregano, and 1/4
tsp (1 ml) salt. Heat oil in large frying pan and set over medium
heat. Add chicken and cook until golden brown on one side, about
4 minutes. Meanwhile, thinly slice green onions.
Turn chicken over, then scatter tomatoes, onions, capers and garlic
around it. Sprinkle with remaining salt. Stir to mix. Cover and continue
to cook, turning and stirring occasionally, until chicken is springy
when pressed and tomatoes begin to soften, from 8 to 10 minutes.
Remove chicken to dinner plates. Spoon tomato mixture overtop.
Sprinkle with fresh basil and, optionally, grated Parmesan cheese.
This can be served over whole-wheat pasta or rice.
